Well, turns out that onions are particularly good at absorbing sulphur which they use in a number of amino acids. When you cut an onion, you break open the cells. The enzymes meet the sulphur-rich amino acids and form unstable sulfenic acids, which then rearrange into a sneaky, volatile chemical causing a burning sensation when it comes in contact with your eyes. In order to keep your precious eyes from being damaged, your brain quickly triggers a response to rinse the offending irritant away. You are left with red eyes and tear-stained cheeks in the middle of preparing dinner.Too much chemistry for you? Well, let’s keep it simple. Onions are tear-jerkers nowadays for reasons other than the compounds present in them. With onion prices hitting historic highs, the government’s slow response in playing the leading role and the opposition having a field day in criticizing the government, it seems like the show will go on for quite a while, making it the latest blockbuster.Looks like emotions are at a high and everyone has an opinion about it.
